Matcha cookies: the recipe

 
 

After the matcha gelato and the matcha cake, I didn't resist to try one of the must among the green tea recipes: matcha cookies. For the shortcrust, I have used Ducasse's recipe and added two teaspoons of matcha. Of course, if you have a favorite recipe for the shortcrust, you can use that one.

The interesting thing about these cookies is that you can taste the matcha, but the flavor is delicate and not invasive at all.

Matcha cookies

(Doses for 25-30 cookies)

  • 500 g of pastry flour
  • 200 g of sugar
  • 300 g of butter cut in pieces
  • 2 eggs
  • 2 teaspoons of matcha tea

Put all the ingredients in a standing mixer and knead them with the leaf-shaped hook. Stop the mixer and place the shortcrust on a surface. Spread the shortcrust with a rolling pin, so that it will have a thickness of about 0.5 cm. Cut the cookies with a round glass or a cookie cutter and place them on a baking sheet covered with parchment paper. Bake the cookies at 180 C for about 10 min (they should be a bit soft when you remove them from the oven).
