Coffee semifreddo: the recipe

 
 

A semifreddo that pretends to be a tiramisu’ ;) The original idea was to make, indeed, a tiramisu’, but given that a) I was out of mascarpone and b) the temperature didn’t stimulate rushing to the first grocery store available, i prepared a chantilly. Well, I have to say that this semifreddo reminded me a tiramisu’, tight at the first bite! And to honest, it was one of the best I ever had…

Coffee semifreddo

(Doses for 4 persons)

  • creme patissiere

  • 300 g of fresh cream

  • 6 tea spoons of sugar

  • 3 espresso cups of espresso coffee

  • 120 g of dried cookies

Prepared the creme patissiere as explained here and let it cool down. Whip the cream with the sugar and incorporate it gently in the creme patissiere, by mixing from the bottom to the top. Congratulations! Your chantilly cream is ready, now you can place it aside. Prepare 3 espresso cups of espresso coffee and pour it in bowl. Place a bit of chantilly cream in the glasses. Soak the cookies in the coffee and form a first layer in the glasses. Add a layer of chantilly cream and keep alternating cookies and cream layers, till you reach the edge of the glasses. Finally, sprinkle with some cocoa powder and keep it refrigerated till the time to serve.
