Chicken and peppers molecular way: another recipe with the whipping siphon

Have you tried the molecular bruschetta? Isn’t it fast to make? Today, things are going to be a little trickier: we will revise an Italian classic recipe in a molecular gastronomy way. Get your whipping siphon ready, today we are going to prepare chicken on pepper foam.

Speaking of which, if you want to attempt some creative dish with a foam, a great approach is starting from a recipe with two-three components (chicken and pepper, in my case) and transform one of them in a foam. Here some examples of dishes: caprese (tomatoes and mozzarella), roasted chicken and potatoes, salmon and avocado (ever tried? If not, I strongly recommend it!), guacamole (tomatoes and avocado).

Back now to our dish. This recipe was conceived as a main course, but by reducing the doses it can also be served as an excellent appetizer. The pepper foam is rather light, much lighter than the tomato foam of the last week :P This is due to the lower amount of fats. For the same reason, this pepper foam is not super stable. Therefore, I suggest to serve the dish immediately.

 
 

Chicken and peppers molecular way (for 2 persons)

For the chicken

  • 2 chicken breast
  • 1 glass of milk
  • 1-2 table spoons of extra virgin olive oil
  • Salt to taste
  • Rosemary to taste

For the pepper foam with the siphon

  • 2 medium size peppers
  • 4 table spoons of water
  • 1-2 table spoons of extra virgin olive oil
  • 2 table spoons of fresh cream (35% fats)

Chop the chicken and brown it in a frying pan, with some olive oil. Add the milk and the salt, and simmer it until most of the liquid will be evaporated.

Clean the pepper by removing the seeds and the stalk. Chop them and cook them in a frying pan, with some olive oil. Once cooked, remove them from the stove and set aside to cool down. Add three table spoons of peppers in a blender. Add the water and the cream, and blend all the ingredients until homogenization. Filter the mixture, before pouring it into the whipping siphon. Follow the manual instruction of your siphon to generate the foam. One N2O capsule will suffice.

Garnish the plates with some foam. Add the chicken and the remaining chopped peppers. Decorate with the rosemary and serve immediately.
